Risotto Radicchio

Riso Carena’s Radicchio Risotto Mix is a natural addition to our risotto collection. Made with radicchio cultivated in the Treviso area of northern Italy’s Veneto region—a beloved ingredient in local cuisine—this mix pairs beautifully with premium Carnaroli rice from Lombardy’s Po River Valley. The result is a risotto with the signature creamy texture and a striking deep red hue, thanks to the radicchio’s distinct, pleasantly bitter flavor.

To prepare, simply add boiling water and stir occasionally for about 18 minutes. For a more personal touch, you can use homemade broth and enhance it with vegetables, meat, fish, or herbs, adding one ladle at a time. Either method yields a rich, creamy, and flavorful risotto.
