Red Lentil Coconut Dal

This easy vegetarian dish comes together quickly for a healthy, easy weeknight dinner! The slightly sweet and aromatic coconut flavors complement the red lentils and sweet potatoes. This dish will make Red Lentils a new staple in your pantry.

Cook Time: 30 Mins



  1. In a high-sided sauté pan, heat sesame-infused olive oil over medium heat. Add in onion and sauté until translucent, about 3 minutes. Add in garlic and ginger and food for another minute or until fragrant. 

  2. Add in sweet potato, Mango Masala Rub, and Ginger Balsamic Vinegar, cooking until the potato has softened slightly, about 5 minutes.

  3. Add in red lentils, coconut milk, and vegetable broth. Bring to a simmer and cook for 15 minutes. 

  4. Add the green beans and cook for another 5 minutes until red lentils and sweet potatoes are done. 

  5. Serve with naan, and enjoy!
